The “Mediterranean” herb mix is an aromatic composition of spicy greens and herbs characteristic of the cuisine of Mediterranean countries. It is used for preparing fish and seafood, rice dishes, vegetables, cheese, pasta, salad dressings, and sauces.
Baked Fish with Vegetables
Ingredients:
• Fish (dorade) – 2 pcs, • Tomatoes – 2 pcs, • Onion – 1 pc, • Olive oil – 2 tbsp, • “Mediterranean” herb mix – 1 tsp, • Salt – to taste, • Ground black pepper – to taste.
Preparation:
Clean the fish from scales, gut, rinse, and dry with paper towels. Rub with salt, pepper, and the “Mediterranean” herb mix. Slice the onion into thin half-rings. Pour boiling water over the tomatoes, then rinse with cold water, peel, and chop finely. Sauté the onion in olive oil until translucent, add the tomatoes, and simmer together for 3-4 minutes. Stuff the fish with the vegetables, wrap in foil. Bake in an oven preheated to 200°C for 30 minutes. Then open the foil, brush the fish with olive oil, and bake for another 10 minutes until golden brown. Enjoy your meal!
