Azerbaijani Seasoning – a traditional blend of herbs and spices used in Azerbaijani cuisine for preparing meat dishes with lamb, veal, beef, and poultry.**
25 g of seasoning is enough for preparing 1.5 kg of meat.
For baking, rub the meat with the seasoning and leave to marinate for 45-60 minutes. For stewing, add the seasoning to taste 5 minutes before the dish is ready.
Lyulya-Kebab
Ingredients:
- Lamb or beef (pork) – 1.5 kg
- Tail fat (lard) – 200 g
- Onions – 2 pcs
- Seasoning @iris.seasonings “Azerbaijani” – 25 g
- Salt to taste
Preparation:
- Clean the meat from films.
- Finely chop the meat, fat, and onions with a knife into mince.
- Add salt and seasoning, and mix everything well in a bowl.
- Thoroughly beat the mince for 5 minutes.
- Form long patties from the mince weighing 150 g and carefully skewer them, spreading them along the entire length. The patties should not tear.
- Cook the lyulya-kebab on a grill over hot coals until done.
